CASA is located in Chijmes, where Chef Remy showcases ‘real cooking’ with wood-fire in the traditional way – what he calls ‘contemporary wood-fired gastronomy.’ We celebrate the seasons through produce; and as he did in Spain, he highlights seafood over meat, serving only one land animal a day on rotation basis. Having lived in places with pristine natural environments, Remy resolves to preserve these conditions and their eco-systems for future generations. At CASA he focuses on the line-caught, the responsibly sourced, the organic and wild-foraged, the traditionally farmed and the bio-dynamic. In our 35 seats cosy restaurant, we present playful menus prepared with 16 very seasonal dishes daily where to choose from. Menus start with snacks and going on to savoury dishes from the sea and the land, finishing with desserts and petits fours.
